How To Make Chia Seed Pudding

Chia seed pudding is a delicious and nutritious dessert or breakfast option. It is often flavored with ingredients like vanilla extract, honey, or maple syrup, and can be customized with various toppings such as fresh fruits, nuts, or granola. Chia seed pudding is known for its high fiber content, omega-3 fatty acids, and antioxidants. It is also gluten-free, dairy-free, and vegan-friendly, making it suitable for a wide range of dietary preferences.

You may want to pick up some mason jars if you plan meal prep for the week.

Black Chia Seeds vs White Chia Seeds

There is a marginal difference between the Black and White Chia Seeds that most sources say they are the same. The Black Seeds have a slightly higher amount of protein and the White Chia Seeds have a bit more omega-3 fatty acids. Overall, Black Seeds are just more common and easier to find. As far as taste, they taste identical. I have heard people want to hide the seeds in their meals, so they chose which color works best for their recipes. I am always looking for a good deal, and the Black ones are always priced better than the White. Pick whichever you prefer the taste will be the same.

Ingredients

You only need 2-3 ingredients. I enjoy it as a dessert, so I do add some sweetness to my pudding.

Chia Seeds – White or Black, whichever you prefer. As I mentioned they taste the same.

Milk – You can use whatever milk you prefer, whole or dairy free. I like vanilla almond milk, adds a bit more flavor.

Optional Sweetener – If you want to make your Chia Seed Pudding more dessert like add a bit of sweetener. Maple Syrup, Honey, Monk Fruit, Syrup, Agave, Vanilla the choice is yours. Just note a little goes long way.

How To Make Chia Seed Pudding

You can mix together in 1 bowl or create mason jars size portions for you meal prep.

Stir together 1/2 Cup of Milk, 2 Tablespoons of Chia Seeds, 1 Teaspoon of Syrup and 1/2 Teaspoon of Vanilla Extract (if you want some sweetness)

Let the mixture sit for 10-15 minutes. It will start to gel up and then stir again. Cover and place in fridge.

The pudding will begin to thicken. I like to keep my overnight to get the thickest consistency, however you can enjoy after a couple of hours.

Then add your favorite toppings – fruit, nuts, nut butter ( I make a homemade version of Nutella) coconut flakes. The choices are endless.

If you are into jams or purees add them to the bottom of the cup then layer the pudding then add some toppings.

Depending on your preference, you can add more milk for a thinner version.

Get creative with toppings. You can sprinkle some cinnamon or chai spices on top. Add a bit of cacao powder the pudding to create chocolate pudding.

Chia Seed Pudding freezes well and will last for several weeks. Just remember to take it out the night before to enjoy the next day.

I enjoy it as a treat after dinner on the weekends. I get excited about trying new fruits and flavors.

Individual Serving

*1/2 Cup dairy or dairy-free milk

*2 Tablespoon of Chia Seeds (White or Black)

*1 Teaspoon of Maple Syrup (or preferred syrup)

*1/2 teaspoon of Vanilla Extract (I prefer Mexican Vanilla)

Larger Bowl (4 Servings)

*2 cups dairy or dairy-free milk

*1/2 Cup of Chia Seeds (White or Black)

*1-2 Tablespoons of Maple Syrup (or preferred syrup)

*1 Teaspoon of Vanilla Extract (I prefer Mexican Vanilla)

  1. Add the Chia Seeds, Milk, Syrup, and Vanilla to a bowl or jar and stir. Let mixture sit for 10-15 minutes. Once the seeds have started to gel stir again.
  2. Cover the jars or bowl and place in the refrigerator for at least 2 hours. I like to make mine at night for the next day.
  3. Mix well before serving and then add your favorite fruits, nuts, and spices.

Final Notes

If your Chia Seeds are not getting thick and gelling after 15 minutes you may have older seeds. Just grab a fresh bag and make a fresh batch

Be Creative – make a puree, try some new nut butters. Use fruit that is in season for the freshest taste. There are no rules for your toppings. This is a nutritious meal that you should enjoy whenever you want. Maybe you will invent a new flavor. I am think I might try Blueberry Lemon on next my next batch
